Sourdough Banana Bread Cake

So I lost my bread pan. Sometimes you have to improvise and use things that you wouldn’t normally use, and that’s what happened to me the other day when my banana bread was being made into cake. The banana bread cake was born from the need to use old bananas and a lost bread pan.

Banana bread was never something I grew up with, but my children and I see it as a solid staple. If there are old bananas, we must make some kind of baked good. I will say there are rarely bananas left over, especially in the summertime when it’s hot and all you want to eat is fruit. But on the occasion we have old bananas, this is what we usually make:

Ingredient

1tsp Baking powder

1tsp Baking Soda

2 pinch salt

2 eggs

2 large bananas

2 tsp vanilla

¼ cup milk

1 cup flour

2 cups active starter

2 Tbs Honey

You can mix the wet and dry ingredients separately or place the dry ingredients in a bowl first and then add the wet on top so you can stir the wet ingredients on the surface of the dry before mixing them together. (If you have read many of my recipes, you would know this is something I regularly do to reduce dishes and get things done in a timely fashion) make sure everything is well combined before pouring it into a cake or bread tin, and then cook in the oven. I usually set the oven at 230 because my oven is terrible and lacks a good-quality seal. If you have a good oven, 180-200 will be good, or whatever temperature you usually use to cook cake. I find that different ovens will need to be treated differently depending on what we’re cooking due to the issues with seals, heating, and size and the addition of fans. Get to know your oven so you know what temperatures work best for your baking. The cake should take between 30-45 minutes but could take longer or shorter, depending on the efficiency of your oven. Be sure to check your cake; if it’s golden brown on the outside and a fork can go in the middle and come out clean, its cooked (you can also take the cake out when there are a few bits on the fork as the cake will continue to cook as it cools and removing the cake at this time from heat makes for a more moist and soft cake.)
