For a long time, pizza and pizza dough had been a mystery to me. I would always order pizza at restaurants and as take-out because I didn’t know better. When my family and I first moved to the farm homestead, we were shown how easy it was to make pizza dough and top it off with the best ingredients. Including scotch fillet. I know that was a gross misuse of such a prime cut, but it was an amazing taste experience. To this day, that pizza is the best pizza I’ve ever had. If you use the best ingredient, you’re on the right track to get the best results. Of course, you won’t necessarily get the best results every time because that depends on the time, effort, and type of ingredients and flavors you mix together. If you like strange flavors and like to experiment, chances are you’re going to make some disgusting meals. So, back to the dough. It’s super easy if you want to make regular yeast dough.

Regular Dough Ingredient

4 cups flour

2Tbs yeast

2 Cups water (warm to activate the yeast)

You mix the water with the yeast first and then pour it in with the flour in a bowl to mix until you have a dough-like consistency; add flour as needed and roll out the dough to the desired shape and thickness, taking care to add flour as necessary so the dough isn’t sticky.

Sourdough Ingredient

2 Cups Starter

2 Cups Flour

2 Tbs Olive Oil

With this recipe, unlike the regular dough, you just put all the ingredients into a bowl and mix. You can use discard or active starter, and when you mix the dough, you want to add flour again as needed so the dough isn’t sticky and can be rolled out. Roll to desired shape and thickness. I usually get 2-4 pizzas out of this dough. 4 thin-based or 2 thick bases.

Toppings

  • You can do a garlic-style cheesy bread pizza by adding garlic butter and a cup or so of cheese
  • You could make a BBQ, basil, or tomato base sauce

Toppings can be literally anything you like cooked. For a time, we added broccoli to our pizzas instead of mushroom or red capsicum. We also love:

  • Pineapple on pizza, which I only recently found out people really loath or love
  • Steak, off-cuts of pork, bacon, beef, and chicken work well
  • Potato thinly sliced can be quite nice and add another dimension to the flavor and texture of the pizza

You Can Also Add:

  • Nuts, seeds, and sprouts

Top off the Pizza With

I always top with herbs like:

  • Oregano, mint, thyme, rosemary, and parsley
  • Fresh cilantro and spring onion are always a nice addition too
